I would actually adjust that pyramid slightly. The veggie block would be larger and the fruit block would be smaller. Instead of nuts and seeds, it would be healthy fat, and it would be much larger.
The simple answer to your question is beans and lentils would not be in my pyramid at all. We believe in evolutionary biology. It is absolutely true people have been eating grains for 15,000 years. It is the reason civilization exists. It is also the first indication of obesity, auto-immune, and metabolic syndrome. People became shorter and fatter.
In this regard, we eat paleolithic foods. Whether you want to call it the Caveman Diet, Paleo Diet, Primal Blueprint, or simply real food.
Beans and lentils are legumes which contain lectins and phytates, or anti-nutrients. In addition, they do not contain a complete protein. Can one survive on beans a lentils? Of course, many people who are morally opposed to eating animals do. Most over-populated countries (including the US) survive on grains. However, we aren't in the business of survival. We are in the business of making people as healthy as possible. Blood markers, body fat composition, along with our definition of fitness.
I was a raw food vegan for some time. I have zero problem with those who do not eat meat and eggs. There are a couple who train here. They have made a moral decision, and I applaud their decision.
